I notice in multiplayer sometimes my opponent will drill into the water, and die, but later he comes back and the hole isn't deep like it didn't reach the water. It is almost like the game recalibrates itself. No lightning or anything.

You're bang on with that: the game "recalibrates" if the PSPs have got out of synch.
