Any way to do this? I'm at a loss, I can't figure it out, the single player mission landscapes are more complex and interesting than the randomly generated ones.

In the host game screen, under the Map Preview box, there's a down arrow (drop-down list). All the single player maps are there.

If any are missing, you can download them on wmdb.org http://wmdb.org/users/Team17 and load them just like any other custom map (save them to your User/SavedLevels folder, and to access them, right-click the Map Preview box). This site also has the mission levels from WWP and the discontinued Asian worms games.
